Fiona Strang’s Layered Salmon Cheesecake
All we know is she says it’s delicious…
Ingredients
– 1 cup breadcrumbs
– Large can red salmon drained
– 300ml sour cream
– 250g cream cheese
– 2 eggs
– ½ cup of mayonnaise
– 1 cup grated cheese
– 4 shallots
Method
Grease 20cm spring form tin. Press crumbs over base. Flake salmon. Stir in ¼ cup cream. Press over the base. Beat cream cheeses till smooth. Beat eggs, mayonnaise and rest of cream. Stir in cheese and shallots. Pour over salmon. Stand on tray. Bake in moderate oven for 1 hour or until set. Stand 10 minutes before removing from tin.
