Emma George’s Favourite Chocolate Fondants

Emma George is a big chocolate fan and says this recipe is a favourite. And it’s easy – even her 9yo can make it…

Ingredients
250g dark chocolate (40-45% cocoa solids)
200g butter
80g plain flour
80g roasted hazelnuts, ground (or substitute same weight in plain flour)
8 eggs
230g sugar
Butter and flour to grease and dust ramekins or moulds
Icing sugar to dust (if you’re being fancy)
Cream or ice cream to serve

Method
– Pre-heat oven to 180C
– Grease and dust 10x90ml ramekins (we used 5 larger ramekins and upped the cooking by a couple of mins)
– Melt butter and chocolate in a bath (you know, put a heatproof bowl over a saucepan of simmering water…) and stir until smooth
– Whisk eggs with sugar. When mixed add flour and ground hazelnuts
– Slowly fold in melted butter/choc mix
– Pour into ramekins
– Bake for 8-10mins (or a little longer if you’re making bigger serves) – they’re ready when the tops are firm to touch
– Remove and rest for 2mins
– Dust with icing sugar and serve with cream/ice cream
