Mrs K’s Anzac Biscuits
1 cup rolled oats
1 cup plain flour
1 cup sugar
3/4 cup desiccated coconut
2 tbs golden syrup
1/2 tsp bicarb soda
2 tbs boiling water
Heat oven to 170 degrees (c).
Combine oats, sifted flour, sugar and coconut. You’re going to add the wet ingredients to this bowl too so make sure it’s a decent size.
In a saucepan combinebutter and golden syrup and stir over a low/medium heat until butter is melted.
Mix the bicarb with the boiling water in a cup and stir. When combined add to the butter/syrup mix and stir. Then add that to the dry mixture. Stir to combine.
Line trays with baking paper and place teaspoonfuls leaving room for spreading.
Cook for 20mins (but keep an eye on them at the 15min mark). If you like them a bit chewy take them out at about 17mins.
Makes about 35 bickies.
